Eggplants don't mature

I live in louisville, ky and just have a small container garden with one eggplant plant. we have had a hot summer, but garden was well watered. fruit does not seem to mature. fruit has a lovely purple color and are a nice size but I have to cut them off the vine and the seeds are green, not brown, and they have a 'green' taste. HELP!
