Drying Onions and Shallots when humid

I have followed the method of harvesting onions including my shallots but because of the quantity have to dry them outside in the shade. I am using an old shoe rack for my shallots recently pulled and have yet to determine what to use for the onions, I have another 4 rows. The shallots are in the shade during the day and in my shed overnight, temperature during the day is around 21 - 25 C with light to medium winds. Unfortunately it is very humid this time of year in Nova Scotia day time 60 - 75% and I am concerned about the dampness when drying outside. Any solutions to combat this problem?
