Eggplant question

Most of my eggplants are producing beautiful shiny black fruit, but sometimes they produce a yellow one! These odd ones grow as big and healthy looking as the normal ones and the plants look normal too. Any ideas?

Eggplant turning yellow

Sometimes eggplants can produce variations of colour. It can be stripes or paler colours. The purple varieties are more stable, but the pale cream and stripey ones can produce oddities, especially yellow eggplants, and they are just as nice to eat.
There are some yellow varieties, such as Thai and African eggplants. Also some eggplants turn yellow when they are overripe.
